Dining
Every dish has its own story. A story told through the ingredients of our Mother Earth. They speak, and do so quietly, through sweet and savory flavors, through sharp and delicate notes. Lumìa restaurant aims to be a narrative of Sicily, tracing millennia of history and tradition. Each combination on the plate tells of a present or past time in which simplicity, refinement, and the value of raw ingredients resonate. Every bite brings you closer to understanding the heart of Sicilian culture. The raw ingredient is the beating heart of Lumìa’s cuisine. Ingredients are carefully selected from local producers and organic farms, respecting
the natural cycles of the land and the importance of seasonality. Vegetables from the Passo Ladro garden, fully ripened citrus, extra virgin olive oil, and local products thus become an authentic expression of the truest Sicily, transforming into preparations that enhance quality without artifices.
Lumìa Restaurant is available to external guests by reservation.

Lumìa Restaurant was created as a meeting place between cuisine and territory, where each dish tells the story of the products and the people who cultivate them.
At the helm of the kitchen is Chef Gabriele Camiolo, who dedicates daily attention to selecting and harvesting ingredients directly from our gardens and the fields of Passo Ladro.
The pursuit of quality and seasonality is at the heart of Lumìa’s work: vegetables, aromatic herbs, fruits, and local products become the main ingredients of dishes that respect nature and highlight the authentic flavors of Sicily. The Chef’s cuisine goes beyond the preparation of dishes, telling a journey that unites territory, seasonality, and artisanal knowledge, turning every dining experience into a moment of discovery.

For us, conviviality is not an abstract concept but a simple gesture: sitting together at the table and sharing a genuine moment. It is from this idea that A Convivial Dinner was born, our signature event, designed as a celebration of being together. A single long table, time flowing without rush, courses arriving to spark conversation, unexpected encounters turning into memories. Each dinner is distinguished by its “blind” menu: every morning, the chef observes what the garden offers and decides in that moment which ingredients and combinations to present.
This approach celebrates seasonality, freshness, and the creativity of the day, making each evening unique and unrepeatable. Each course thus becomes a discovery, a story of contemporary Sicily and its raw ingredients, to be experienced and shared with fellow guests. We believe that cuisine reaches its deepest meaning when it becomes an occasion for connection. At Lumìa, every dinner is an invitation to open up, listen, and participate. Because the true beauty of food is realized only when it is shared.

“My cuisine is not born over the flames, but in the furrows of the earth. I am a child of a Sicily that smells of dust, wild thyme, and stones warmed by the sun. For me, cooking at Dimora delle Balze means giving voice back to a land that does not need the sea to feel immense. Growing up in the Iblei means understanding the value of time and of restraint. My journey is a conscious return to my roots, where the term Organic is not a technical definition, but an act of respect.
I have chosen to look inland, where the biodiversity of ancient grains, the sharpness of ash, and the purity of citrus create an authentic and striking gastronomic landscape. My cuisine is one of memory and tradition, a vegetal avant-garde. I firmly believe that an artichoke cooked in its ash or the scent of a lemon can tell the story of Sicily with the same nobility as a rare ingredient. In my menu, fish gives way to the complexity of the land: a choice from the fields that celebrates rural identity, sustainability, and the truth of raw ingredients. Each dish is a fragment of this landscape.
Welcome to my vision of the Iblei.”
